Dansk Mjød — pronounced roughly “dansck myod,” with mjød being the Danish word for mead — is one of the most recognized commercial mead producers in Europe. Based in Billund in Denmark’s Jutland region, the meadery has been producing artisan mead since 1994 using proprietary brewing equipment developed entirely in-house. Viking Blod — Viking Blood
Viking Blod — meaning Viking Blood — gets its characteristic deep reddish color from dried hibiscus, evoking the blood Vikings spilled in fierce battles. The name is dramatic. The mead delivers on it.
Dansk Mjød combined traditional wildflower honey mead with dried hibiscus and ginger to create Viking Blod, giving it a distinctive color alongside a spicy, aromatic, and floral taste. It then spends six months aging in oak barrels with hops — a technique that borrows from both brewing and winemaking traditions to create a mead that defies easy categorization.
Tasting notes: Wildflower honey leads the nose followed by tart hibiscus florals and a subtle cherry-like fruitiness. A faint hop presence and warm ginger spice round out the aromatics. The entry is rich and sweet with bold honey quickly balanced by tangy hibiscus pulling the palate toward a drier mid-section. The six months of oak aging introduces structural dryness and woody complexity that most meads simply lack.

Dansk Mjød cannot promise supernatural poetic skills after drinking Odin’s Skull. But the characteristic taste of cinnamon and apple is, in their words, unrivalled.
Odin’s Skull is fermented from a base of honey with malted barley and ale yeast — a process closer to braggot-style brewing than traditional still mead. The deliberate addition of hops introduces a dry, bitter counterpoint to the honey sweetness, alongside cinnamon and apple that give it a warm spiced dessert character.
Tasting notes: Intense honey dominates the nose joined by warm cinnamon bark and baked apple. The entry is rich and honey-forward, thick with toffee and dried fruit sweetness.
